I would recommend Ivan Tomek's <a href="http://www.iam.unibe.ch/%7Educasse/FreeBooks/Joy/" target="_blank" onclick="return top.js.OpenExtLink(window,event,this)">The Joy Of Smalltalk as a complete and deep introduction to the world of Smalltalk.

There are also some very goods practical courses from the San Diego University written by Roger Whitney:
