... when no request are done - after some time (several minutes) - the
vm tells me, that there is no memory left ... and jade crashes again ...

The gem log (look in /opt/gemstone/log) for the session should contain quite a bit of information about what processes were running in the moments leading up to the out-of-memory event as well as the object composition of memory when you did run out of memory ...
