I haven't looked at your code, but did you see https://medium.com/concerning-pharo/an-implementation-of-unicode-normalization-7c6719068f43 (the article and/or the code) ?

One of the problems with (the) Unicode (database) is that it is huge and we probably do not want this in the image by default.

Although (in an enterprise) context it would be worth to have (and an acceptable price to pay) all this by default (as well as a font with a wide coverage and a fallback mechanism).
