I think that Pharo1.1.1 #11414 is pretty close to the latest version of Pharo that can be used for GemTools ... I recall trying to load GemTools in Pharo 1.2 and later and ran into issues with the changes that have been made to OmniBrowser.
I've recently releases GemTools 1.0-beta.8.5, so I recommend that you upgrade GemTools.
GemStone 3.0.1 was recently released (I will be writing a blog post on this soon). 3.0.1 has a number of bug fixes included that directly affected Seaside (in some cases there were segmentation faults) ... So the known set of bugs have been fixed in 3.0.1, but there may still be some subtle bugs lurking around. 3.0.1 comes with GLASS 1.0-beta.8.7 pre-built.
If you are planning on going into production in the near future then I would recommend 2.4.4.7[1].
We have an upcoming 2.4.5 release and I plan to have GLASS 1.0-beta.8.7 pre-built, but we are at least a month away from 2.4.5. You say you are deploying in the next months, so perhaps you should plan on targeting 2.4.4.7.
