It certainly works headless:

$ cat /etc/issue

$ mkdir pharo5

$ cd pharo5

I always run the following script to install 32-bit dependencies:

$ cat ubuntu-32bit-support-on-64bit.sh
#!/bin/bash
sudo dpkg --add-architecture i386
sudo apt-get update
sudo apt-get install libc6:i386
sudo apt-get install libssl1.0.0:i386
sudo apt-get install libfreetype6:i386

Which is part of my https://github.com/svenvc/pharo-server-tools project (still on Pharo 4 though).
